the oxygen in the air is the reason why avocados turns brownish, as well as the presence of phenolic compounds in itself. There are many ways to keep them fresh but I have found the most amazing way which keeps avocados fresh as new. Split the avocado in two and cut a thick layer of medium size onion, cover the onion layer on the avocado and keep both of them together in a Ziploc bag and keep it in the refrigerator. This will slow down the browning process.
